Naked Berry Pies

When we were in Nashville this past fall, we went to the Loveless Cafe for breakfast one morning.  It was awesome, and I have been dying to go back since then.  Since I am up in the Catskills and nowhere near Nashville, making one of their Naked Berry Pies will have to do.  As you will see, “naked” refers to the fact that you do not use a pie pan to make these amazing delicious pies.  We have friends coming up this weekend with their three boys, and I can’t wait to try out this recipe http://www.lovelesscafe.com/recipes.  I am thinking of using blueberries- if anyone else tries them with a different fruit, please let me know how it turns out, and I will try to put up a picture of my attempt this weekend!!

Creme de Menthe Bundt Cake

We had some friends over a few weeks ago for a BBQ and asked them to bring dessert.  It was one of the better decisions I have made because my friend brought a Creme de Menthe Bundt Cake.  I had never had this cake before, and it was amazing.  I love mint, mint chocolate chip ice cream, York peppermint patties, anything mint-related- which is funny because while Walker has a palate that likes just about anything, the one thing he doesn’t like is mint.  This actually works out well when I get a big box of Junior Mints at the movies, and I don’t have to share with him.  Back to the cake, though,  even Walker, with his aversion to mint flavor, loved this cake.  After we all had had several pieces for dessert, and my friends were getting ready to leave, her children were outraged that she was leaving the leftover cake for us.  Normally, I would have insisted that she take the cake with her, but I really, really wanted the rest of that cake, so it stayed with us (although I don’t actually think it made it through the next day since Corby and I both had pieces for breakfast the next morning).  I have been thinking about that cake off and on since then, and it has now come down to the fact that I need another one.  Fortunately, I have the recipe!

Creme de Menthe Cake:

Ingredients

1 package yellow cake mix
1  package instant pistachio pudding mix
1/3 cup vegetable oil
4 eggs
1/2 cup creme de menthe liqueur
1 container sour cream
1 cup semisweet chocolate chips

Directions:

Preheat oven to 350. Grease and flour a 10 inch tube pan.

In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in oil, eggs, liqueur and sour cream. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Stir in chocolate chips. Pour batter into prepared pan.

Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Thank you, thank you to the South Will Rise for making me the happiest mama in Charleston! My Red Velvet-y Daisy Cake was a dream  – a deep jewel color with seams of cream, moist (I don’t like that word but it is the only one I can use to describe its sumptuousness, EVEN after several days in the fridge (we rationed our…selves to very thin slices)) and frankly the best cake I can remember eating. Unfortunately I had to share it with my sister, four nephews and nieces and their parents visiting from Bavaria AND my very hungry husband, so it disappeared QUICKLY. I am definitely going to order one the next time I need a special gift for someone, and most of all, the next time I am in need of Cake Therapy myself!

Father’s Day Daisy Cake Give Away

Our Mother’s Day Daisy Cake Give Away was so successful and fun that we are doing another one for Father’s Day!  All you have to do to enter is comment on this post- so easy!  The cake this month is a Hummingbird Cake, which sounds amazing, and I know with Kim Nelson, the owner of I Love Daisy Cakes, behind it, this cake will be something special.  For a little recap of Kim and all her greatness, she appeared on the show Shark Tank and received a $50,000 investment from Barbara Corcoran to help take I Love Daisy Cakes to the next level.  And it did!  Kim has gone from making around 2000 cakes a year to over 25,000.  She has most recently appeared on the Nate Berkus Show and will be cooking on the Today Show at the end of this month.  This lady makes the best cakes around.  So, just comment on this post with a smiley face, a thought about cake, or even a thought about Father’s Day, and you will be entered to win.  We will announce the winner next Friday, June 15th.  Keep your thoughts on cake and good luck!

Hospitals, Limos and Meringues

Still reveling in the relaxation of my girls weekend- I for some reason thought last week was going to be a breeze.  I knew there were some things to do to get ready for Walker’s birthday which was on Sunday, but his party had been organized, my mom was making his cake, his dad and grandparents were coming into town and Walker was going to stay with them over the weekend- all of these things made it seem like the week and weekend were going to be stress free.  But then life happens and Walker gets a trimmed branch in his leg Wednesday night which resulted in his first ER visit.  I know that I should be happy and thankful that it has taken him this long- just shy of 9 years to actually hurt himself enough to wind up in the ER, but I really just wish he would never hurt himself again ever.  I would post a picture of the bone-deep gash in his leg, but it is really pretty disgusting so I won’t.  Walker really was a trooper through the whole experience and watching him all loopy on morphine was really pretty funny, and 12 stitches later, I thought- OK, that was a small glitch and he won’t be able to play in his last soccer game, but we made it through this.  Then we went back to the doctor on Friday to get his bandages changed and his leg was infected.  Well, of course I have been reading the horrible story about the woman who fell on the zip line, and every terrible thing that could happen to my sweet little boy rushed into my brain.

Fortunately, Walker did not have to be admitted overnight- but he did have to get another round of IV antibiotics, and they switched his oral antibiotic to a stronger one, so hopefully now, we are all in the clear.  In fact, you wouldn’t have even known that he had a bone-deep gash in his leg as he prepared for his birthday party on Saturday afternoon.  All Walker wanted to do for his birthday party was have a limo- clearly, the coolest thing ever to an 8-year-old- he didn’t want to go anywhere or do anything, he just wanted to have a dance party with his friends in a limo.  I thought this was ridiculous.   His dad thought it was a terrific idea- so I caved in on the condition that his dad ride in the limo with the kids- not me.  When the stretch Hummer that his dad had reserved pulled up, these kids went nuts- they piled in, and off they went for an hour long drive that would end at the playground around the corner so we could all have cake and ice cream.  It actually was a fantastic party for the kids- they had a ball, and since all Corby and I had to do was set up the cake at the playground and wait for them to return, it was a pretty easy party for me as well- Walker’s dad and his step mom (who decided to go for the ride as well at the last minute and thank goodness she did because two adults is always better than one when dealing with 12 kids in a limo) definitely got the bad end of this deal as he reported about the utter mayhem and extreme loudness that was the limo ride.  The next day was Walker’s actual birthday, and we all met up at my parent’s house for a birthday dinner celebration. Walker’s dad and step mom and their two children who are 5 months old and 17 months old, Walker’s paternal grandparents, me, Corby, and my parents and of course Walker all celebrated his 9th birthday and toasted ourselves for turning out such a wonderful boy.  The best part of the whole night outside of the many many bottles of wine and Walker himself, was the cake.  Walker decided he wanted a meringue cake with vanilla ice cream, caramel sauce and whip cream.  My mother makes the best meringues in the world, and she gave me the recipe to share with you! So despite all the craziness of the week with hospital visits and limo birthday parties, ending any week with a meringue cake always makes it better!

Meringues

Beat:
3 egg whites at room temperature
1 tsp. vanilla
1 tsp. white vinegar
1 tsp. water

When stiff peaks form, very slowly add 1 cup sugar.
Form into small shells or 3 large discs on DOUBLE -layered waxed paper.
Place in a 200 oven and let bake all night.

For shells- serve with a scoop of ice cream and drizzle with your favorite sauce.

When making the large discs- scoop ice cream into two 9 inch cake pans that are lined with wax paper (keep excess paper on the sides to lift out ice cream later) and press down until it is flat and is about 1 inch thick.  Store in freezer over night while the meringues are baking.  In the morning, layer one meringue disc on the bottom, then the ice cream, then another meringue disc followed but the second ice cream and finally the last meringue disc on top.  Cover the whole cake with whip cream and drizzle your favorite sauce on top.

From the beach to the barn- two fun weddings!

We went to two weddings this weekend, and maybe that is not a crazy thing, but one of them was in Charleston and the other was in Arkansas.  It felt a little crazy to me.  The first wedding was on Saturday morning out on Sullivan’s Island.  My very dear friend Kendall married a fantastic guy named Robert.  The wedding was at his family’s beach house, and it was so wonderful.  Kendall looked so beautiful, and it was an intimate, close ceremony right on the beach with a super fun reception that followed back up at the house.  Now that I am writing this blog, I feel it is my obligation to really focus on the cake at weddings- it is my lot in life.

Kendall and Robert’s cake was awesome!  The top layer was carrot cake, the second layer was chocolate, and the bottom was vanilla.  All three were delicious, light, and creamy.   Happy and warm in the sun, full of cake and surrounded by friends, it was very hard to leave, but on to the next.  We dashed home to pack and then went out to the airport to catch our flight to Northwest Arkansas, where Corby’s cousin was getting married on Sunday afternoon.  The two weddings could not have been more different.  I knew everyone at Kendall’s wedding and knew no one at Samie and Kevin’s wedding.  Kendall and Robert were married on the beach, and Samie and Kevin were married up on a hilltop overlooking Fayetteville, AR, in a beautiful barn.  Kendall had cake- Samie had pie.

Now, despite the differences, both weddings were so much fun.  It was so great to meet all of Corby’s family and friends who had come into town for the wedding, and the barn was so beautiful.  Now the pie, or should I say pies, because there were five different kinds- chocolate pecan, strawberry, apple,   peanut butter, and mixed berry.  I am not kidding when I say that peanut butter pie was something special.  If you follow this blog at all, you might remember that I tried to make a peanut butter pie and failed miserably.  Well, this pie did not fail- it was so so so good.  I have never thought about having pie at a wedding, but it was genius.  It was a busy but fun weekend, and I am glad to be back in Charleston and so glad these two wonderful couples are married- congratulations to them both!  Also, don’t forget, you have until Friday to enter the Daisy Cake giveaway- just click the link and comment to enter https://thesouthwillrise.com/mothers-day-dasiy-cake-give-away/

Mother’s Day Daisy Cake Give-Away

This past Friday, I finally tracked down Kim Nelson of Daisy Cakes- she was in Nashville, TN looking at a new distribution company for her cakes and very generously took the time to talk to me.  A little background if you haven’t yet heard of Kim Nelson and Daisy Cakes because the way she is taking the cake world by storm, you will soon (www.ilovedaisycakes.com).  Kim is from Spartanburg, SC and has been baking with her mother and grandmother since she can remember.  After catering and giving cooking lessons, Kim decided to start selling her old family recipe cakes on line and nation wide.  After a year and a lot of time, money and effort, a friend suggested that Kim try out for the show Shark Tank on ABC where a group of investors are presented ideas and decide to invest in the business or not.  Out of the 22,000 people that uploaded their information to be on season 2 of Shark Tank, 80 people were chosen to pitch their ideas initially and then 32 people made it on air.  Kim was one of the lucky.  Not only did she make it on the air, but she got a $50,000 investment from Barbara Corcoran which has turned her small cake company around.  Here is the link to the episode http://www.youtube.com/watch?v=AVM-RuLh2KI.  The episode aired just over a year ago, and since then, Kim has been on the Nate Berkus show and QVC, and she was invited to be a guest at the South Beach Wine and Food Festival where her cakes were a huge hit.  She will also be appearing on the Today Show at the end of June, and her “cakes of the month club” will be featured as a prize on the Wheel on Wheel of Fortune as well as being “the next item up for bid” on the Price is Right.  She is in the process of moving the Daisy Cake distribution center from New York to Nashville, TN so that she can be closer and keep an eye on things.  She started out making about 2,000 cakes a year, and from April of last year to December, she sold over 25,000 cakes.  Quite a jump in just a year!  What I was most impressed with was the reaction people had when tasting her cake for the first time.  Watching the Shark Tank episode, she serves up her cakes to some pretty heavy hitters who are no strangers to the best chefs and restaurants in the county.  All of the reactions were surprise- because its cake, and how much different can one chocolate cake or lemon zest cake taste from the rest.  All of these people were surprised at how delicious these cakes were.  It was unbelievable!  Now, I have yet to taste one of these cakes, but I am dying to, and I bet you are too!  Not only is Kim an incredible baker, but she is also extremely generous because she has donated three of her cakes for us to give away to lucky readers!!!  The first cake that we will be giving away is the May Cake of the Month- Pink Velvet Cake- four layers of pink velvet cake with cream cheese icing- how good does that sound!!!  All you have to do to enter is comment on this post- write a smiley face or just say hi, and we will randomly pick a reader to win the cake and announce it on Friday, May 11th.  The cake will be shipped to the winner who will then hopefully invite us all over for cake!!  So pass this along to all of your friends and neighbors and start commenting so you can win, and if you don’t win this time, we still have to more cakes to give away!

Lowcountry Local First Farm Tour

I was asked to write an article for Eat This! Charleston about the Lowcountry Local First Farm Tour.  It was so much fun!!  Corby, Walker, Nemo (our 11-year-old Springer Spaniel) and I piled into the car and drove out to John’s Island, where we met up with Ian, the photographer (his photograph is to the left and there are a lot more in the article) from Eat This!. Ian is a sophomore in high school and got into photography through the school newspaper, and he is extremely talented- I can’t wait to see where this kid is in ten years.  There were seven farms on the tour, and because of timing and the fact that we had Nemo with us, we only ended up going to five farms.  It was so interesting to see what an amazing impact of the whole “buy local, eat local” movement is having on these farms that might otherwise be out of business.  The best part of the whole thing was that each farm was serving some sort of food, and clearly, since I was writing an article, I needed to try everything that they had.  It was really tough for me when we got to the winery, and all they had was four fantastic desserts that we just had to buy and eat.  It was awesome.  Here is the article from the magazine- hope you like it! http://www.eatthischarleston.com/index.php/features/item/the-low-down-on-our-local-farms#

And here is the picture of the pet Walker adopted at one of the farms.  He, of course, wanted to keep him and his justification for taking him home was that we wouldn’t need to mow the grass anymore!

Carrot Art, Carrot Ninja, Carrot Cake

My wonderful 8-going-on-40-year-old son Walker has recently gone on another health kick.  Usually, he comes home from school and has an hour of downtime before any afternoon activities or before he does his homework.  He, of course, goes right to the refrigerator to get a snack which is typically lemonade and a bag of chips.  Well, now he has turned in the bag of chips for “long carrots” as he calls them (as opposed to the mini carrots that come already peeled).  I know he must love the taste of carrots, but I think he has more fun peeling the carrots and carving them up into different shapes before he eats them.  I came downstairs the other day to find carrot peeling all over the sink, counter and window behind the sink.  Exasperated, I asked him how he got peelings everywhere.  He replied that he just peels carrots so fast, like a ninja, that they fly all over the place and then proceeded to show me.  He is too funny, and it is impossible to get mad at him for carrot peelings all over the kitchen when he is a self-proclaimed carrot ninja.  He also has taken to cutting his carrots into pipes or different animals.  I googled “carrot art” today and am not sure whether or not I should show this to him as he will have me buy all the carrots in the store so he can try to make something similar.

So with all the carrots in my house now, I guess a carrot cake is necessary.  I looked up a bunch of carrot cake recipes, and surprisingly, a lot of them had pineapple or cranberry or some other type of fruit or nut.  I was just after a plain carrot cake with cream cheese icing (which makes everything better), and this seemed to be the best one.  Let me know if you have a better recipe!!

Ingredient for Carrot Cake:

2 cups flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

1 tsp cinnamon

2 cups sugar

1 cup oil

4 eggs

3 cups shredded carrots

Directions:

Mix all dry ingredients

Add sugar, oil and eggs

Mix well

Add carrots, mix well

Bake at 350 for 1 hour

Ingredients for Cream Cheese Icing:

2 (8 ounce) packages cream cheese, softened

1/2 cup butter, softened

2 cups sifted confectioners’ sugar

1 teaspoon vanilla extract

Directions:

In a medium bowl, cream together the cream cheese and butter until creamy

Mix in the vanilla, then gradually stir in the confectioners’ sugar

Store in the refrigerator after use
