Atomic Blue- A new dipping sauce that will blow your mind!

Clearly one of the best things about fall is football season, and if you aren’t really into football, at least you can enjoy a good tailgate or “football watching” party.  However, I have found that these things tend to get a little repetitive in their food choices.  Wings, beer, chili, you get the idea.  Until now- this dipping sauce is really the perfect blend of spicy and cool blue cheese that makes whatever you dip into it a million times better.  It is so flavorful and interesting- I am completely hooked.  I also love the story behind it.  Three high school friends back in the late 80s and early 90s were tired of ketchup, mustard, mayo as their only condiments and came up with the recipe.  Then college and life got in the way, and it has taken them almost 20 years to get back together and realize that it is still the best dipping sauce and that there still is a need for it today.   Right now, you can order this at www.whatisatomicblue.com, and I have no doubt that you will be able to find it in grocery stores soon.  They will soon offer Atomic Salsa, Atomic Q, Atomic Ranch and Atomic Marinara which I know will be awesome.  So, if you want to add something special to your next tailgate or any event- give this a try!

 

Turtle Candy and Real Turtles

I have a very weird fear of small animals like mice, fish, lizards, frogs, etc.  I am really only afraid of these things, which lets be honest, can not hurt me really at all, when they are close to me and move unexpectedly.  Then I freak out.  Take fish- I love fishing and catching fish, it is super fun, but when said fish that I caught gets put into a bucket and starts jumping around and trying to get, I run screaming.  I really don’t know why.  Walker had a pet fish for a while, and I dealt with it pretty well until the day I was cleaning the fish bowl, and the fish was in a glass on the counter next to the sink.  And then the fish jumped out of the glass and into the sink, and I started screaming.  Did it even occur to me to pick up Walker’s beloved fish with my hands?  No.  And we were out of paper towels and the fish was getting closer to the drain.  So I grabbed a spoon- not quite sure what I was going to do with that, but anyway- sad story, the fish went down the drain.  Maybe not my best moment and definitely won “Worst Mother of the Year” award for that one.  It turns out that my fear of little animals extends to turtles as well.  We went kayaking last Sunday which was so fun.  Walker and Corby were in a kayak together, and Walker spotted a turtle in the water.  I thought- neat- and kept on paddling.  A few minutes later, Walker and Corby paddled up and Walker thrust his new friend at me.  I screamed and nearly fell out of my kayak.  This was the funniest thing that Walker had seen in a long time.  Before you get the entirely wrong impression of me, I am not completely girly.  Spiders, cock roaches, insects, I have no problem with these things.  I can kill spiders all day long, but rodents and small aquatic and amphibious creatures not so much.  Anyway, as with most things I do, I immediately starting thinking about what fun recipes I could get from this experience.  Turtle soup- no.  But turtle candy- yes!  This is a fun easy recipe from www.allrecipes.com

Pretzel Turtle Candy

Ingredients:

20 small mini pretzels

20 chocolate covered caramels

20 pecan halves

(or however many you want to make- doesn’t have to be 20)

Directions:

Preheat oven to 300 degrees.

Arrange the pretzels on a parchment lined cookie sheet, and place one chocolate covered caramel candy on each pretzel.

Bake for 4 minutes, and while the candy is still warm, press a pecan halve on each candy covered pretzel.  Cool completely before storing.

Parasailing and Pimento Cheese (Part 1)

Walker had his first day of school yesterday- except that it was only for one hour.  I am not really sure the point of a one-hour day, but I guess it eased him into it.  However, I had to then think of something else for us to do for the rest of the day.  Driving back over the bridge from running an errand, I saw a boat pulling para-sailors in the harbor, and just like that, I had my idea for the day.  I went home and called Tidal Wave Water Sports (www.tidalwavewatersports.com), and two hours later, Walker and I were in a boat headed out to parasail.  It was awesome and not really scary at all (but I was really happy to be back on solid ground when we were done).  I am not sure what the correlation between the two is, but something about seeing the para sailors in the harbor and then doing it myself made me think of a Garden & Gun post on Facebook I saw the other day about pimento cheese and the Lee Brothers.  The post talked about pimento cheese purists who will only use shredded cheddar cheese, Dukes, and jarred pimentos, and anything else isn’t pimento cheese.  Well, the Lee Brothers (I love them!) put a spin on this classic using Swiss cheese and banana peppers.  Highly interesting, and here is the recipe:


Pimento Cheese

10 oz. Swiss cheese, finely grated
One 12-oz. jar pickled banana peppers (hot if available) drained and minced
3 tbs. sour cream
1/4 tsp. black pepper
1/4 tsp. red pepper flakes
1/4 tsp. kosher salt
2 tbs. chives minced (approx. 1/6 bunch)
2 tbs. capers (soaked in fresh water for 1 minute, then drained)

Directions

Mix all ingredients together with a spatula until evenly blended.  Refrigerate, if possible, for 2 hours or overnight.  Serve in a bowl with a good supply of crackers.

All of this got me thinking- well, if you can use Swiss cheese, why couldn’t you use my favorite pepper jack cheese?  And I think that you could, and then I started thinking that you could use this new mixture in the pimento cheese popovers recipe that is so phenomenal (all of this thinking and random associations between this and the para sailing occurred around 3am in a semi dream/tossing and turning state, and all of this would probably make much more sense if I had written it all down last night when it seemed really genius).  So, I am going to try it!  I am going to use Duke’s Mayonnaise Pimento Cheese recipe but substitute pepper jack cheese for cheddar, and if that all turns out to be as delicious as I think it will, I will then make the Pimento Cheese Popovers with the new pepper jack concoction.  And the creating and testing of all of that will be Part 2 (no more para sailing for a while).  If you have any suggestions or helpful hints- they would be much appreciated!!

Battling the heat- I am not winning.

It is currently 98 degrees outside with a real feel of 109.  Guess what… our air conditioning went out yesterday afternoon- hello heat and welcome to my house, please don’t stay long.  While I can’t get an actual temperature reading in my house, you can imagine that it is a little on the uncomfortable side.  Fortunately, I did make that pink lemonade pie, and it is helping, but I need to be eating it in a freezer, not the oven, which is my existence at the moment.  I went to a hot yoga class the other morning at Charleston Power Yoga, and it was awesome.  I had never been to a hot yoga class before, and the best thing about it, besides how awesome I felt and what a great workout it was, when I walked out into the steam of the morning, because I had been in such a hot room, the 85-degree air felt so refreshing.  Seeing that it is hotter outside now than in the yoga class, I don’t think that will work.  Also, moving as little as possible seems like a better option at the moment.  I did Google recipes to “beat the heat” and came across a great blog called Gooseberry Patch.  Here are their ideas for recipes to beat the heat http://gooseberrypatch.typepad.com/blog/2012/07/rru-beat-the-heat.html.  When the AC is fixed hopefully this afternoon, maybe I will have the energy to try one, but for now, I will stay seated on the couch in front of the fan.

Banana Pudding and BBQ

This question may have been asked a million times, but it hadn’t occurred to me until recently- why is banana pudding always served as dessert at BBQ restaurants?  Not that I am complaining at all- I love banana pudding, it is one of my favorites.  It is such a staple at my favorite BBQ haunts that I have always taken it for granted, but we had a curious experience up in the Catskills pertaining to BBQ that got me interested in this question.  We were down in the small town of Phoenicia, at the bottom of the mountain, and we saw a BBQ stand.  Intrigued and thinking this might be a quick and easy thing to grab for dinner, we went to the stand to buy some BBQ to take home with us.  When Corby asked to buy 3 lbs of BBQ, the proprietor of the stand was incredibly confused and asked, “Do you want a 3 lb sandwich?”  “No, no- we just want to buy 3 lbs of BBQ- you know, in bulk.”  This did not actually help.  “In bulk? I don’t know what you mean,” our friendly salesman said.  When Corby then said, “You know- in bulk- so we can take it home… for dinner… later… We are from South Carolina,”  we just got completely blank stares.  “Well, do you at least have any banana pudding?” I asked- more stares.  Clearly, we were speaking different languages when it came to BBQ.  We laughed about this the whole way home, and I am sure they laughed about the crazies from South Carolina who wanted a 3lb BBQ sandwich for a long time, too.  So, needless to say, we will be waiting until we return south to get some BBQ- especially in bulk.  But I did start wondering why banana pudding is always served at BBQ.  After some googling, I haven’t found an answer.  It seems that bananas were imported (as they are not naturally found in the United States) from Mexico, Brazil, Costa Rica, etc, so it makes sense that they would be more abundant in the South.  Vanilla Wafers weren’t around until 1901-1902, and while they make banana pudding that much better, that is no explanation.  My explanation would be that some genius was eating BBQ and then had banana pudding for dessert and thought, “Now those are the two best things I have ever eaten and should always be together.”  I applaud that person and agree wholeheartedly.  Here is the original Nilla Wafer Banana Pudding recipe from Nabisco (http://www.nabiscoworld.com/recipes/recipe.aspx?recipe_id=55431), and if you have any other insights on this issue, please share!!

Banana Pudding

Ingredients:
3/4 cup sugar, divided
1/3 cup flour
 dash salt
3 eggs, separated
2 cups milk
1/2 tsp. vanilla
45 NILLA Wafers, divided
5 bananas, sliced

Directions

MIX 1/2 cup sugar, flour and salt in top of double boiler. Blend in 3 egg yolks and milk. Cook, uncovered, over boiling water 10 to 12 min. or until thickened, stirring constantly. Remove from heat; stir in vanilla.
RESERVE 12 wafers for garnish. Spread small amount of custard onto bottom of 1-1/2-qt. baking dish. Cover with layers of 1/3 each of the remaining wafers, bananas and remaining custard. Repeat layers 2 times.
BEAT egg whites on high speed of mixer until soft peaks form. Gradually beat in remaining sugar until stiff peaks form. Spread over custard, sealing well to edge of dish.
BAKE 15 to 20 min. or until lightly browned. Cool slightly. Top with reserved wafers just before serving.

Maple Bacon and a 4th of July Parade

We had some friends up to visit us in the Catskills last weekend with their three boys.  It was so great to see them, and I think they enjoyed escaping the heat that was attacking the rest of the country.  Our friends had never spent much time in the Catskills, and I think we made converts out of them.  We spent time between swimming at the pool, hiking and eating of course.  We introduced them to the best ice cream in the entire world- Perry’s Piece of Cake.  It, unfortunately for me, is a regional upstate New York ice cream company, and they have not expanded to South Carolina yet.  Hopefully, after I start a letter campaign, they will.

Anyway, this ice cream literally tastes like yellow cake batter and chocolate icing- which if you are like me, the batter and icing is the best part of a cake.  If you can find some- try it- it is something special.  The funniest part of the weekend was Sunday morning.  Corby was making his awesome cracked pepper and cheddar biscuits (https://thesouthwillrise.com/cracked-pepper-and-cheddar-cheese-biscuits/), and I was making scrambled eggs and maple bacon.  Maple bacon is again something I can not find readily in South Carolina, and it is so good.  It smells so good.  Denny, our friend’s 7-year-old son, ran down the stairs excitedly, wondering where the pancakes were.  The maple bacon filled the house with the smell of maple syrup, and Denny could not figure out why, when the smell of syrup was coming from the kitchen, we were not having pancakes.  It was so funny.  Fortunately, he loves scrambled eggs just as much as pancakes, so he was not too disappointed.  It was a great weekend!

We followed up the weekend with a super fun 4th of July.  The Twilight camp put on a great parade- the campers had spent the first part of the week making costumes.  We had eagles, bunnies, bears, and skunks- the costumes were awesome.  Walker was an eagle, and he made his mask with a fish coming out of his eagle’s mouth.  Then there was a park-wide BBQ down at the pool with a dive and jump competition (one picture is AJ winning the belly flop competition, and the other is Walker in the big jump competition), and the day was finished off with a carnival up at the playground with games and face painting.  The counselors and CITs outdid themselves, and the kids had so much fun- here are some pictures!  I hope everyone had a great and safe 4th- send in your favorite grilling recipe from the holiday if you have a chance!  We are looking for new ideas while we are up in the mountains- thanks!!

 

 

The Father’s Day Daisy Cake Winner is…

LAUREN!!!!  I am so sorry for the late post about out winner but better late than never!  I didn’t have my trusty sidekick Walker with me to help pick the winner, so Corby had to suffice.  As you might imagine, he did not recreate the Hunger Games “reaping” ceremony the way Walker did last time, but even so, a winner was chosen, and Lauren is the lucky lady.  I am super excited to have her as the winner, and I hope she and her family love the cake!  Thank you all so much for participating, and we still have one more cake to give away- yay!!  This next give away is to celebrate Kim cooking on the Today show on June 29th, so we will have another drawing that day.  Hope everyone has a fun and delicious Father’s Day!!

Thank you, thank you to the South Will Rise for making me the happiest mama in Charleston! My Red Velvet-y Daisy Cake was a dream  – a deep jewel color with seams of cream, moist (I don’t like that word but it is the only one I can use to describe its sumptuousness, EVEN after several days in the fridge (we rationed our…selves to very thin slices)) and frankly the best cake I can remember eating. Unfortunately I had to share it with my sister, four nephews and nieces and their parents visiting from Bavaria AND my very hungry husband, so it disappeared QUICKLY. I am definitely going to order one the next time I need a special gift for someone, and most of all, the next time I am in need of Cake Therapy myself!

Father’s Day Daisy Cake Give Away

Girls Weekend- Gar, Shark, and a Sea Snake- Oh My

This past weekend was girls weekend with my two best friends Marguerite and Jodie, and while it would have been a great opportunity to cook and try a whole bunch of different recipes to share with you all, that didn’t happen.  The whole idea for the weekend started a couple of months ago when we were lamenting the fact that none of us knew each other when we all got married and that none of us were at each other’s bachelorette parties.  The idea evolved that we should go to Myrtle Beach and have a bachelorette weekend where we would all pretend to be brides again and really go to the extreme since none of us would ever do that for serious.

While dressing up in veils and having inappropriate male anatomy jewelry sounded like a lot of fun, we decided we would go to the country and sit on the dock instead.  We exercised every morning before we went down to the dock to read trashy magazines and fish.  We did not really cook, we just snacked on cheese and crackers, a huge store bought cookie cake, oreos, and little debbie snack cakes.  We napped in the afternoon, and then more dock time followed by hours of House Hunters International.  It was pretty awesome.  Now, I need to clarify some stuff about the fishing.  I love fishing.  I hate fish.  They actually freak me out- a lot.  The first afternoon, Jodie had caught some bait fish in the cast net, and fortunately, she has no problem cutting up fish and putting the bait on hooks.  I do have a problem with that.  That afternoon we caught a couple of gar, which are really pretty scary prehistoric fish with a very long snout full of sharp teeth that want to bite you.  So every time we caught a gar, we just cut the line and let it swim away with our hook (which Jodie assured me dissolves over time- not that I really felt bad for the gar, but it did make me feel a little better).

The next morning, I woke up early and went to throw the cast net since we had finished off our supply of bait fish the night before.  My first cast was incredibly successful as I caught 12 mullet and a shrimp in my net.  Now here is the part where I really hate fish.  Most of the mullet went in the bait bucket no problem- one jumped out onto the dock and two got stuck in the net.  I put the net back in the water and the two swam away, but the real problem was the one on the dock.  It was jumping and flopping around, and I could not deal with it so I ran back to the house and waited for Jodie and Marguerite to get up so they could help.  Here is the part where I really love fishing.  Once Jodie got the mullet that was now dead on the dock cut up and on our lines, it did not take long for our first bite.  I started to reel in the line and this thing was a fighter!  After about 5 minutes of reeling and pulling, I finally got my catch up to the surface, and it was a huge shark- at least 4 1/2 feet long, and this is the water we were supposed to swim in later (swimming did not end up happening).  Once we got a good picture, we again cut the line, but we were all feeling pretty powerful and in charge of nature.  That was until a few hours later when Marguerite, who had not really been in the whole fishing thing thus far, decided it was her turn to reel in our next bite.

The next bite happened, and she jumped up and started reeling.  It gave her a bit of a fight but finally she surfaced it, and it was a freaking snake!  I am not kidding- a full on snake.  Maybe it was an eel, but I am pretty sure it was a snake.  This snake eel had the fish bait in its mouth and now body and then it started twisting itself up in the fishing line.  It was so disgusting and we were screaming like the girls we are.  It was all we could do not to just throw the whole rod in the water to be done with that thing, but Jodie managed to cut the line, and that pretty much ended our attempt at fishing for the rest of the day.  Sunday was Mother’s Day, so we decided to let the boys come down to spend our last day with us.  My parents came down as well with the boat.  Despite all of the crazy things we had been pulling out of the water, my sweet wonderful Walker had a Mother’s Day surprise for me.  He had gone with my dad the day before to take a water skiing lesson, and when they called after to report, they both said it had not gone well.  I was so disappointed because I love to water ski and really wanted Walker to enjoy it.  With a lot of cajoling, I got him to say that he would try it again.  I was so nervous watching him in the shark infested water trying to get his skis on and sure that he was going to fall and that I might have to get in the water to help him.  Well, the little devil popped right up on his skis.  I was ecstatic!  The whole thing had been a trick, and the lesson had actually gone really well.  He was so great and so proud to show me what he could do.  It was a wonderful Mother’s Day surprise especially since he didn’t get eaten or bitten by gar, sharks or sea snakes!!!
